Summer Fruit Salad

Fruit salad is a dish consisting of various kinds of fruit, sometimes served in a liquid, either in their own juices or a syrup. When served as an appetizer or as a dessert, a fruit salad is sometimes known as a fruit cocktail or fruit cup. In different forms fruit salad can be served as an appetizer, a side-salad, or a dessert.


  1. 2/3 cup fresh orange juice
  2. 1/3 cup fresh lemon juice
  3. 1/3 cup packed brown sugar
  4. 1/2 teaspoon grated orange zest
  5. 1/2 teaspoon grated lemon zest
  6. 1 teaspoon vanilla extract
  7. 2 cups cubed fresh pineapple
  8. 2 cups strawberries, hulled and sliced
  9. 3 kiwi fruit, peeled and sliced
  10. 3 bananas, sliced
  11. 2 oranges, peeled and sectioned
  12. 1 cup seedless grapes 2 cups blueberries

Fruit Salad Direction:

  1. Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat.
  2. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes.
  3. Remove from heat, and stir in vanilla extract. Set aside to cool.
  4. Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries.
  5. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.
